After many years I finally found out I cannot have gluten in my diet anymore due to Lectin Intolerance. Having a diet in the past that was rich with carbs with lectins I have to admit it's not too bad being gluten lectin free especially when our friend Collette shared this amazing recipe for "Gluten Free High Protein Pancakes" with us. They taste so amazing and so good for you I just had to share with everyone. We have them in the Rea household just about every weekend.
